The once-famous Wolfer Goldgrube is prime Middle Mosel real-estate, a site with historic fame. The Goldgrube also happens to have a genetic gold mine of old, un-grafted vines of 100 years of age. The winemaking philosophy is as simple as it gets, there are no short cuts, no compromises. For this wine Daniel does basket press with half of the grapes cold soaking for three days and then stainless steel for aging. Still a slow cool old school fermentation with longer elevage. There is a sleeping power to both the acid and the phenolic structure here, it is a powerful wine with great aging potential.
Pairing: Think fattier dishes cooked with butter and buttermilk

The 2020er Schimbock, as it is referred to on the consumer label, is a bone-dry wine (with 2.2 g/l of residual sugar) made from Riesling grapes harvested in the Trabener Schimbock situated in the continuation of the Wolfer Goldgrube. Half of the grapes were pressed directly and half of the grapes were kept for 3 days for cold soak, and were pressed with an old basket press and was fermented and matured in stainless steel tanks. It presents a magnificently reductive and spicy nose, which only gradually gives way to white flowers, fine spices, zesty fruits, smoke, lime tree, and anise. The wine is superbly playful and fully dry, yet it has great energy and focus. There is some phenolic and tannic presence which needs to integrate.
