Nestled in the Vallée des Reculées lies the village of Nevy-sur-Seille, adorned with towering limestone and marl cliffs overlooking vineyards that gently slope down. Here, Francois Rousset-Martin crafts his thought-provoking wines amidst a serene landscape where livestock graze and rest. Francois' passion for wine was ignited during his upbringing in Burgundy, where his father worked as a microbiologist for the renowned Hospices de Beaune. After completing his enology studies and exploring the Southern Rhone and Languedoc regions, he returned to his Jurassian heritage and founded his winery in 2007. Made from Aligoté sourced from Bouzeron, it shows a cornucopia of fruits and tertiary characteristics.
The color pours a touch golden. I sense the aroma of roasted pineapple mingled with a subtle hint of agave. There is also a nutty flavor of peanut brittle and a caramelized sweetness, like crème brûlée. As for the taste, it explodes with a lively burst of energy, revealing flavors of roasted pineapple, apricot, and green apple skins, with a waxy and salty finish. - Kimberly
