This tiny 1.5 hectares vineyard is located in Ardèche, in the heart of the Saint-Joseph appellation. Martine and Christian make a two bottling project that it's a lesson in Terroir. In essence, the juice undergoes the same treatment in the winery, however the grapes are sourced from two different vineyard sites with two different soil types. A perfect way to demonstrate how the influence of soil and climate can affect the end result of a wine. 'Chave' is a 1-hectare vineyard planted with vines dating to 1958, with a more western exposition. Both cuvées employ two weeks of whole-cluster fermentation in concrete over indigenous yeasts. The young wine is then aged over for 16-18 months in neutral (5-9 years) oak barrels of 228L . The finished wine is then bottled unfiltered and entirely without SO2. Having these two bottling side-by-side is a fun experience and a great way to show why the same grape can have such a distinct character when grown in different places. The wine is stunning and everything you want from a northern Rhône Syrah, peppery smoke, black olives and perfect balanced acidity.
