Born as the son of a vignaiolo, turned professional football player, turned enologist on the turf of the notorious mob boss Salvatore “Totò” Riina, Aldo Viola is a force to be reckoned with. He is passionate & energetic. Now working along side his brother Alessadndro, he produces wines as exciting as his personality, implementing minimal intervention in the winemaking process. His red ferments in steel with a six-or-seven-day maceration, then ages it for a year in large Slavonian oak casks, bottling it with a minuscule dose of sulfur. His wines are the perfect transition red from summer to fall, being medium bodied but offering up integrated tannins.
Pairing: Roasted meats, heavier sauces
Grapes: Perricone, Syrah, Nerello Mascalese, 30 kilometers outside of town Alcamo, closer to the sea
Soil: Sandy- clayey with rich iron content
Viticulture: Organic practicing
Winemaking: minimal sulfur additions (never more than) 20 milligrams per liter total
