4 Monos (4 Monkeys) is a winery started in 2010 by four wine savvy friends - Javier García, Laura Robles, David Velasco and David Moreno – in the Gredos mountains, west of Madrid. The Tinto is a “village” red from several parcels in Cadalso de Los Vidrios, San Martín de Valdeiglesias & Cenicientos. This tinto is a lively, silky, & aromatic expression of Garnacha hailing from the granitic soils and high elevation of the Sierra de Gredos.

Pairing: Scallion chicken, roasted parmesan-spiced cauliflower, BBQ

Grapes: 85% Garnacha, 8% Carinena, 7% Morenillo

Soil: Decomposed Granite
