Francisco Mora, Master of Wine and Garnacha evangelist, had a mission to seek out the most expressive, uniquely situated, high-elevation, and oldest vines of Garnacha to show that the Garnacha from Aragon could be as complex and ethereal as any made in the rest of Spain, if not the world. With that in mind, Francisco moved to Calatayud and partnered with Bodegas San Alejandro, where Yolanda Días had access to the best vineyards in the DO. The Altas Parcelas is a blend of parcels where the vineyards are over 50 years old, 100% head-pruned, and planted at elevations greater than 700m. The grapes were vinified using 50% whole cluster in concrete tanks to preserve the innate character of the mountain fruit.
Pairing: Beefsteak Tomatoes stuffed with ground lamb, rice, fresh oregano, mint and parsley.
