This delightful sparkling is made in the Method Ancestral, which the grapes are wild yeast fermented in stainless steel tanks and old 225L French oak barrels, and bottled before primary fermentation has completely finished. The bubbles lift the texture of the grape blend, which have a natural oiliness and round body. Great with aged hard cheeses.
