'Les Grézeaux' is made with 100% Cabernet Franc from the oldest plot of the estate, planted over 50 years ago. The grapes are hand-harvested and fermented for 15-20 days in cement vats.  The wine is aged fifteen months in unlined cement, then bottled without filtration two winters after harvest.  This Chinon opens with aromas of red bell peppers on an open fire and a cool breeze through the forest, leading into crunchy raspberries, black peppercorn, and dark plum skin.
