Un-fortified Jerez? Yesssss please!!
These wines are one of the best expression of soil one can find. The name Cota 45 is a reference to 45 meters above sea level, the point where Ramiro Ibanez believes the best Albariza soils can be found. The Miraflores Pago (or vineyard) bottling, the Albariza is most varied: Lentejuelas, Lustrillo and Tosca Cerrada. Ramiro ferments using old Manzanilla barrels (some are 150 years old) without temperature control, which he believes helps to best express the flavors of Palomino.
Soil: Albariza (Chalk)
Farming: Lutte Raisonee- meaning chemicals are only used when absolutely necessary
Pairing: think: chestnuts, marcona almonts, chorizo, paella. All the good stuff
