Cantina Cantina is the newest project out of the North Fork of Long Island from two friends, one brewer & one wine maker. They are breaking the mold of traditional North Fork wines, searching for vineyards that are eschewing the use of harsh chemicals, picking early, and harnessing natural acidity, in search of an honest & pure wine, unfined, unfiltered with no added sulfur. Lemon, lime, pea tendrils & a touch of white pepper are expressive on the nose, while the displays dominant notes of lemon and grass.
Grape: Sauvignon Blanc, old vine, hand harvested & whole cluster pressed
Fermentation: Barrel in old French oak with native yeasts, no fining, no filtrations, no additives, no added sulfur
Vineyard: Early Rising Farm, sustainably farmed, no herbicides.
