Nadia Verrua owns about 7ha of vines in the Monferrato zone of Asti.
At the helm of the estate for well over a decade, Nadia is still aided by her parents Ottavio and Teresa. In her early years, she produced wines under the region's DOC and DOCG labels, but has progressively abandoned these designations to free herself of their limitations. Her Freisa is destemmed with the berries kept whole; they are very gently pressed, without breaking the skins, just enough to kick off fermentation. No yeasts or sulfur are added. Maceration in cement and steel tanks lasts up to 2 months+. The wine ages on its lees for a few months before being bottled without fining or filtering or with only a gram or two of sulfur.
Pairing: Cured meat, hard cheese, asiago
