Simone Blanc is aged for 12 months in barrel, giving the wine a textured mouthfeel, and a youthful green pine resin quality on the nose and is marked by a long and lingering finish. The Rougier family have an almost monopoly on the region of Palette in the hills just south of Aix-en-Provence and are responsible for some of the most compelling wines to come out of Southern France. While delicious with a decant in its youth, it seems to age effortlessly, gaining a complexity not unlike mature white Bordeaux , Hunter Valley Sémillon, or Valentini Bianco; lemon oil, beeswax, rosemary, bitter honey emerge after years in the cellar, with ten and twenty year-old bottles still showing great freshness and verve.Only 200 cases of this enter the US each year!
