Christoph Hoch 'Kalkspitz' Pet-Nat, Austria NV
Christoph makes wine at his family ancestral home in the town of Hollenburg, in the southern part of the Danube river. Inspired by the similarities in soil with Champagne, Christoph began his quest to make sparkling wines in the region. Clocking in at a max of 11% alc. this delicious Pet-Nat is dry and very expressive of the chalk it grows in. This wine represents the New Austria movement with your winemakers breaking the mold and moving away from classic wines in the region.
Pairing: Pretty much at any day and any time
Grapes: 70% Grüner Veltliner, blended with Zweigelt pressed white, Sauvignon Blanc fermented on the skins, Blauer Portugieser and Muskat Ottonel
Soil: chalky soil much like what is found in the Côte des Blancs in Champagne
