Just a few kilometers south of the village of Morgon, there's a small village named Cercié, this is where Christophe Pacalet based his winery. Unlike most of Beaujolais winemakers, he doesn't own vineyards but he purchases the grapes from selected terroir. This Beaujolais-Village is fermented in cement tanks for 15 days. After undergoing a cold carbonic maceration the wine is aged in cement tanks for 6 months before being bottled. The vineyard selected for his Village label is composed on Granite soils with a southwest exposure.
