Clos Cibonne 'Cuvée Spéciale des Vignettes' Rosé, Provence, France 2020
Clos Cibonne is located 800 meters from the coast. An estate with a great history, formerly being owned by a marine captain to Louis XVI. In 1979 the Roux family purchased the land and brought the estate to its fame. This is NOT your classic Provence rosé. This wine is aged for 1 year under fleurette (a veil of yeast - like fino sherry) for 1 year and aged in 100-year old 1500ml foudres. Savory and dark fruits dominate the palate making this a wine perfect for heartier fish stews like Bouillabaisse. This estate is one of the 18 Cru Classé in Côtes de Provence.
Pairing: Hearty fish stews like Bouillabaisse
Grape: Tibouren (60 year old vines)
Soil: Schist
Farming Practices: Organic
