Clos Cibonne 'Cuvée Spéciale des Vignettes' Tibouren Rosé, Côtes de Provence, France 2021
One of the 18 Cru Classé in Côtes de Provence, Clos Cibonne, is located 800 meters from the coast. Clos Cibonne was once owned by a marine captain to Louis XVI, but in 1979, it was purchased by the Roux family, who brought it to current fame. This is NOT your classic Provençal rosé. This wine is aged for one year under fleurette (a veil of yeast - like fino sherry) for one year and aged in 100-year-old 1500ml foudres. Savory and dark fruits dominate the palate making this a wine perfect for heartier fish stews like Bouillabaisse.
