Colli di Catone 'Colle Gaio,' Lazio, Italy 2007
If you are familiar with the wines of Valentini, Gravner, and Miani, Colli di Catone is another name to add to this list. The commitment to Lazio's indigenous grapes and the individual expression of grape and vintage is unparalleled. Antonio Pulcini is far more of an obscure producer, quietly turning out white wines of similarly mind-bending complexity. The obscurity of Pulcini's wines is partly due to his reclusiveness and how he chooses to sell his wines exclusively from the cellar door of his estate, Colli di Catone. His wines rest for years before bottling in stainless steel tanks, following more years or decades in the cellar. The bottles are only released when Antonio deems them ready to drink.
Pairing: Caio e Pepe, spaghetti alle vongole, shrimp scampi, fried squash blossoms
