In the 40 + years since Giusto Occhipinti cofounded COS winery, he's gone from being a pioneer in natural winemaking to one of the most esteemed producers in all of Sicily. His latest project is Naturale Vermouths, a collaboration with his close friend and chocolate maker, Simone Sabaini, which was inspired by their mutual love of Sicily. This recipe remains a secret but it is made from organic Nero d'Avola, fermented with a spontaneous fermentation with natural yeasts. A great substitution on a negroni or just alone on the rocks for Apero hour.  This secret recipe is teaming with lovely aromatics and notes, of menthol, sour cherry, quinine, and citrus.
