Croix et Courbet is a small-scale project initiated by David Croix of Domaine des Croix and Damien Courbet, a winemaker from the Jura region's Nevy-Sur-Seille. The project began as a passion project that celebrates their shared interest in the Jura region, known for its diverse terroirs and climatic conditions.
As winemakers, they aim to showcase the beauty and diversity of the Jura region's terroirs and explore the full potential of Savagnin grape. Savagnin is a grape variety that is more robust and less sensitive to oxidation than Chardonnay. Croix et Courbet's approach to winemaking is to reveal the grape's floral side and highlight the Jura terroirs' diversity through individual parcels. While the grape is typically vinified in an oxidative way (sous voile), Croix et Courbet chooses to explore the full potential of this grape variety by vinifying it without contact with oxygen (ouille).

Soil: A parcel selection from 4 ha total; vines planted between 1980 and 1989. The three parcels include: En Lya: western exposure, shallow clay-silt topsoil with limestone scree over a deeper layer of Liassic gray marl Au Calvaire: southeastern exposure on a gentle slope, tucked away in a valley, fine limestone scree and clay topsoil above gray marl Trémoulette: at the bottom of a west-facing slope, fine limestone scree and clay topsoil above gray marl
