Alice & Olivier, are the husband and wife team behind the de Moor wines. Both graduated with degrees from Dijon Enological School. Olivier grew up in Chablis where as Alice grew up in the Jura. The de Moors have 1.2 hectares of Chardonnay in two contiguous parcels in Chitry-Le-Fort, down the road from their home village of Courgis. Like their next-door Aligoté parcel, this one they began planting in 1995; together these parcels form the origin and heart of the estate. The exposure is northwest and the soils are 25-30 centimeters of clay over hard limestone rock. Notes of orange blossom and citrus fill the senses, the palate is on the richer side finishing with pleasing salinity.
