Beyond wine making and managing an entire biodynamic farm, Ricardo Perez also hosts classes for the future generation on bread and cheese making, as well as other skills that are getting lost in the region. His focus on preserving and unifying the region's identity is bringing the appellation to the spot light more and more over the years.
