Domaine Bachelet-Monnot Chassange-Montrachet, Burgundy, France 2021

The Bachelet brothers started their own winery in 2005, using some of their family's vineyards. Since then, they've acquired 22 hectares of old and very old vines across various regions, including Maranges, Santenay, Chassagne, and Puligny-Montrachet. Their farming practices are sustainable and they call it 'très lutte raisonnée', which means a "very reasoned struggle." They're careful when making wine and only use minimal sulfur doses when necessary, never during bottling. They use 350-liter barrels to avoid the overpowering taste of oak spice and to highlight the precise mineral flavors and taught structure. 

Marc, one of the brothers, said that the small doses of sulfur used during bottling ensure the wine is protected from the elements while also allowing for minimal free SO2. The result is a pure, transparent, and mineral-rich wine that has little to no reduction and can last for many years.
