Hauts Baigneiux is a project dedicated to its terroir—a great plot of land complemented by organic farming and a keen eye in the cellar. Hauts Baigneiux is a single lieux-dit composed of several vineyards, including 'La Surprise,' 'Les Pentes,' & 'Clos de la Cour.' The soil consists primarily of clay with limestone bedrock, while portions in the southern part of the lieux-dit have a heavier flint/silex content. Given the ensemble of perfect conditions, it is not surprising that Domaine des Hauts Baigneux 'Blanc Chenin' is a dazzling Chenin Blanc. The fruit is fresh and lightly ripe with notes of orchard fruit, citrus, and a touch of tropical notes, fleshing the body out just the right amount. There is a delicate white floral undertone to the fruit. The acid is persistent but restrained.
