Jean Foillard took over the domaine from his father in 1980 & helped change the way the world looks at Beaujolais. As a devout follower of Jules Chauvet, Foillard Implemented low yields, organic viticulture, long slow, whole cluster fermentation and aging in old barrels. Consumers & wine professionals started taking more than just a second look at these wines. The wines are hauntingly aromatic, bold yet subtle and have great structure and mineral driven components. Follaird's wines have incredible aging potential. Buy one and save one for later.
Pairing: Roasted chicken (just do it).
Grape: Gamay (10-90 years old vines) from Côte du Py
Soil: Schist, Granite, Manganese. These granite and schist soils sit on an alluvial fan at the highest point above the town
Vinification & Aging: Traditional, whole cluster fermentation lasts from 3-4 week, Aged for 6-9 months in used oak barrels.
