Bertrand is the current Maume-in-charge at the tiny Domaine Maume. He has been involved in making the wines here since the mid nineties. Domaine Maume’s wines are deep, profound Pinot Noir experiences. Most of their vines are quite old, this Mazis-Chambertin has 75 year old vines. This is 100% destemmed, aged for 18-20 months in older barrels. This has structure and power. With the ripe 2015 vintage you can drink now otherwise cellar.
Pairing: roasted duck or squab- creamy mushroom sauces.
