Domaine Pierre Guillemot Bourgogne Côte d'Or, France 2021

Domaine Pierre Guillemot Bourgogne Côte d'Or, France 2021
The Guillemot family has worked Savigny-lès-Beaune vines for eight generations and produces wines with classic Burgundian finesse and balance while leaving us a reminder of Savigny’s rustic character. Many Savigny-les-Beaunes vineyard managers have embraced 'Lutte Raisonnée' viticulture; restricting any use of chemicals to only when intervention is unavoidable.
This surprisingly deep Bourgogne Rouge has a secret: Beneath the unassuming label it is really a Savigny-les-Beaune and a Chorey-les-Beaune. The Guillemot family vineyards, planted over 30 years ago, straddle the boundary of the two appellations. Despite the pedigree of the grapes, the family humbly offers this terroir-driven beauty under a simpler (and more affordable) name.
Packed with dry cherries, violets, and warm spices, this wine is a perfect pairing with fall fare. Aged 18 months in old oak barrels and another 6 months in the bottle, this is a Bourgogne Rouge you can cozy up to right away.
Pairing: Tomme or Reblochon cheeses, Grilled short rib, Pork tenderloin with sour cherry sauce
Grape: Pinot Noir
Soil: Marl, limestone, gravel
