At a young age Jorge interned at Domaine de la Romanée-Conti before making his way to Vega Sicilia for a few years. At DRC, he developed a love for terroir and at Vega Sicilia, a passion for indigenous white varieties grew stronger and stronger. Various versions of Albillo are planted in the vineyards of Dominio del Águila and Jorge and Isabel even own two rare, small parcels that are planted entirely with Albillo. Despite the fact that the D.O. doesn’t recognize white wines, Jorge feels that his best vines of Albillo – small clusters of deeply golden berries – demanded to be segregated and made into a tiny production white wine. Even with its generic designation, it is a D.O. defining wine and one unlikely to be emulated.. It’s hand harvested, pressed by foot, fermented and aged in French oak barrel on fine lees for 12-14 months.
