Rémi and his wife Laurence began purchasing their own vines in 2006 and it was not until 2010 did they decide it was time to make their own wines and stop selling to the local co-op. All of the Dufaitre wines are fermented using carbonic maceration in concrete tanks. The wines have a purity and a freshness to them, which is why he understandably has a cult following amongst Paris' natural wine scene. This will go down too easy!
