Once sugar-dry, the wine was moved to neutral barriques to age for 6 months.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp class=\"\"\u003e\u003cem\u003eThe second pick, three weeks later, comprises the later-ripening varieties at Ricetti – Valdiguié, Carignan and Colombard.  This pick was very minimally crushed, with a full third of the fruit left intact on the bottom of the tank to undergo carbonic fermentation.  The goal with this style of fermentation was to extract much less tannin and produce a fruitier, lighter wine, as a counterbalance to the earlier, more tannic pick.  After 5 days whole cluster in tank, the partially fermented fruit was pressed to stainless steel.  Once primary fermentation finished, the wine was moved to neutral barriques to age for 5 months.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp class=\"\"\u003e\u003cem\u003eIn late March, these two field blend components were racked out of their barriques and blended just before bottling, to create one comprehensive Ricetti field blend.\" - Emme Wines\u003c\/em\u003e\u003c\/p\u003e","brand":"Emme Wines","offers":[{"title":"750ml","offer_id":42378543005742,"sku":null,"price":29.0,"currency_code":"USD","in_stock":false}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0257\/0636\/4974\/files\/rn-image_picker_lib_temp_73e378eb-16f9-478e-9b71-a79398f57839.jpg?v=1780247870","url":"https:\/\/onekourtwine.com\/products\/emme-wines-pink-lemonade-red-blend-mendocino-california-2025","provider":"One Kourt","version":"1.0","type":"link"}
