Ferdinando Principiano produces world-class, elegant, and natural wines with a watermark of traditional Barolo terroir. All farming is uncertified organic, but he goes way beyond the standard organic practices and is obsessed with preserving or creating the conditions for biodiversity in and around his vineyards. For his 2016 Boscareto Barolo the grapes were fermented whole cluster and pressed by foot, with maceration of about 30 days, followed by four years in large wood botti and one year in bottle prior to release.
