Manchuela is an almost forgotten region until recently, with talent such as Javier Revert reminding us of the beauty of this terroir and its native grapes. Finca Sandoval is based around Cuenca in Manchuela, a location boasting high altitudes and limestone soils. There is a rich farming tradition in this biodiverse landscape, which rises from 750 to 1000 meters above sea level on the Meseta (central plateau) of Spain. You can still find 80-year-old vineyards planted with traditional local varieties, interspersed with olive trees and cereal crops. This wine is driven by apricot and lanolin, pastry, and lemon oil with weighty intensity, refreshing acidity, and long, joyful finish. Aurora is begging for food, especially cooked in butter.
Pairing: cod with a beurre blanc, buttered chicken is a spice-infused yogurt marinade made with fresh ginger, garlic, lemon juice and spices
