Fossil & Fawn 'Do Nothing', Red Wine, Oregon 2021
Owners and winemakers, Jim Fischer and Jenny Mosbache, found that the kind of wines they like, and thus the wines they make, follow a natural approach to winemaking that allows the vineyard to do the talking. Do Nothing refers to the that same style of winemaking, they 'do nothing' while the grapes ferment carbonically in vats for 30 days. After pressing 50% of the juice goes to stainless steel while the remaining juice sits in neutral barrels. Light, bright and fruity red, for easy drinking during the warmer days. Don't forget to chill it first!
