The romantic grape is on ancient and rare local varietal, essentially saved by Cazin and a couple of other growers who fought to save their old vines as well as the varietal as a whole by establishing an appellation to feature the grape. Cour-Cheverny has only existed since 1997.

All grapes are harvested by hand and after fermented in steel tanks using only native yeast. The wine is aged on it's lees without stirring in 20-25 hectoliter Founders for 6 months, returned to underground concrete tank for a year and then bottled by gravity and without filtration.
