Guillaume Boillot is the future of Domaine Henri Boillot.   The property has deep roots in Burgundy, going to back to 1885 & with Henri at the helm the future is bright.  Since 2008 Guillame has made significant changes at the domaine, including his “integrative method” for the red wines, in which  maceration takes place in barrels opposed to large vats. Twice a day the barrels are hand turned, which facilitates better contact between juice & skin. On the village level it adds unparalleled complexity, and at the premier cru & grand cru level it creates an incredible textural plushness & approachability for these age-able wines.

For the whites, Guillaume has implemented the use of a state of the art vertical press, which removes all oxygen from the tank during the pressing of the grapes, and retains incredible freshness. The combination of Guillaume’s focus on the timing of picking with these advanced presses leads to a white with texture, broad minerality, and freshness.

The 2018 Volnay 1er Cru Frémiets exhibits lovely aromas of raspberries and cherries mingled with orange rind, spice and raw cocoa. On the palate, it's medium to full-bodied, lively and fine-boned, from more calcium-rich soils than Les Chevrets and built around bright acids and fine, chalky tannins.
