Domaine Costal/Henri Costal is a unique collaboration between Chablis producer Domaine Jean Collet and Kermit Lynch, with Romain Collet at the helm. During my visit in 2023, I was struck by the pure tension and energy of their Chablis. The project started with a barrel tasting with Kermit, which led to custom labeling, vinification, and bottling processes exclusively for the American market. The result was a terroir-driven Chablis. Owner Romain Collet discovered his great-grandfather's original label from when he founded the domaine in 2018 and proposed reviving it and using the Henri Costal name.
