Henri Millan's domaine is nestled close to the Alpilles Mountain Range in Provence. In the process of taking over his vines and converting from traditional farming practices to biodynamic his fruit started to die. With that he researched the best grapes for his specific soil types, leading him to grapes out side of the denomination. Therefore, in 2007 he left the AOC to produce wines true to the soil type. Dark fruits waft from the glass yet they are fresh and not overly ripe. The flavor is concentrated but there is great structure and acidity that keeps the wine a live and fresh.
Pairing: Braised Beef
