Il Censo 'Njuro' Perricone Terre Siciliane Rosso, Italy 2016

Il Censo is located in Bivon, in the south-central zone of Sicily.  Gaetano and Nicoletta Gargano met Giampiero Bea about 25 years ago and fell in love with the work the Bea family was doing in Montefalco. With the help of Giampiero, the couple began revive some abandoned vines in their estate and produce some of the most interesting wines in the region. Fermentation occurs over two to three weeks with indigenous yeasts and minimal or no use of sulfur. This island wine is a little on the wild side.  Dark fruits and structured acidity make it the perfect companion to your next pizza night. 

Grape: Perricone, also known in local dialect as “njuro cane”
