The estate was created in 2019 by Thomas Ayoun and Marie-Sophie Jullien. They are located at the foot of Mont-Ventoux cultivating vines via organic and biodynamic principles. Both their red wine and white wine have exceeded my expectations, especially for the price point!
The vinifications are done without inputs, and without sulphur. The grapes ferment with their native yeasts; we accompany them in the most natural way possible, by simply controlling the fermentation temperatures. They do not use any technique that would aim to modify the nature of the wines. All of the cuvées are then aged in century-old amphorae (terracotta). This almost drinks like a coastal white, there is so much freshness and energy. It is quite light with notes of orange pith, white peach & nectarine.
