Located in Chavot, within the Côteaux Sud d'Epernay, a sub-region sandwiched between the Côtes des Blancs and the Vallée de la Marne, the estate is run by Aurélien Laherte, who took over from his parents in 2005. The Aurélien has become one of the most progressive and dynamic rising stars in the appellation. Technically he purchases fruit from other domaines to make his wines, however he is "purchasing" from his aunts and uncles who inherited parts of the original estate- to bypass some French laws. Mont Aigu is a single parcel of old vine Chardonnay located just five minutes from Aurélien home in Chavot. This is everything you can wish for from a Blanc de Blancs, rich and aromatically powerful with great tension and salinity. Only 500 bottles have been released.
Pairing: Perfect for a full tasting menu option. This style of Champagne is very versatile with food and will lift anything from raw seafood to poultry and even heavier sauces.
