Le Puy de l'Ours 'Clos des Godeaux,' Savigny-lès-Beaune, Burgundy, France 2021

Le Puy de l'Ours has absolutely crushed it with their debut vintage, 2021. This small domaine is run by a husband and wife team Jean Orsini and Juliette Puyperoux. Their vineyards are in their third year of organic certification, and the winemaking is approached with a light hand. Clos des Godeaux shows expressive cherry fruits, bright acidity, perfectly textured grainy tannin, and a long floral finish. Give this team a shot; you will not be disappointed.

Pairing: Rack of lamb with an herb crust, tuna steak, braised rabbit

Grape: Pinot Noir planted in 1968, Petits Picotins (55%), Grand Picotins (5-10%), Aux Fourches (30-35%), Saucours (5%)

Soil: Clay-limestone soils with white marls, southwestern exposure

Viticulture: Organic

Vinification: 100% de-stemmed (in 2021), light daily pump-overs and just two-foot punch-downs at the end of fermentation, vertical press, aged in barrel (no new oak) for about 10 months
