The Pinot Noir Extended Layover is sourced from Macari Vineyards in 2022, which uses as little intervention as possible in the vineyards, implementing biodynamic practices. Pressed without maceration. First and secondary ferment in Demi-Muid barrels with racking in between. Bottled with a bit of sugar for carbonation. No sulfur or yeast was added.
