Matthieu and Sylvanie took over the domaine, from Matthieu's Father, in 1990. They continue the great legacy of Françios Bouchet, which was converting this 6 hectare estate to biodynamic farming in 1962! The Chenin Blanc is aged in large neutral oak barrels in the tuffeau cellar for one year before heading to bottle. The vines are 40-80 years old. The total production of all the wines is quite miniscule. The estate vines are some of the oldest in the region (some more than 80 years old) produce naturally low yields, which means that the estate produces only about 2000 cases of wine each year, only about 100 of which make it into the United States. The is a dry Chenin Blanc, on the fuller bodied side. Lots of concentration of flavor; wet stone, citrus & honeysuckle. Once its gone...its gone!
