El Maestro Sierra was founded in 1830 by José Antonio Sierra, who was first a master cooper in Jerez de la Frontera. His humble beginnings, making barrels for elite producers, led to the accumulation of a wealth of knowledge and the creation of his own Sherry house. When he sought to promote himself from a cooper to a producer he faced fierce competition from the wealthy and well-established houses (the label hints at him being hunted like a fox by pack dogs). Luckily, he persevered and continues crafting a range of classic styles, including Fino, Amontillado, Oloroso, and Pedro Ximénez, using a traditional solera aging system. El Maestro Sierra is family-owned to this day, and celebrated for its rich, complex, and long-aged Sherries.
This 15-Year Oloroso is a robust and complex Sherry made from Palomino grape wine aged 15 years in an american oak cask solera system. The long oxidative aging develops deep flavors of roasted nuts, treacle, and burnt apple, balanced by woody notes and devoid of any actual sweetness. On the palate, it is dry and profound, with a weightier texture than biologically aged Sherries, and a long finish of toasted, buttered, sourdough walnut bread.
