Guillaume manages 10 hectares of vines at the southernmost part of the Coteaux du Lyonnais, a relatively new appellation, just on the border with the Rhone. The sandy soils and large stones absorb heat and a, along with the more Rhone-like climate, allow a good maturation of the Gamay. This is a light-bodied yet structured Gamay with good tannins.
Soils: Glacial Moraines and Gneiss
Pairing: Roasted Cauliflower, Korean cuisine
