Benoît Marguet can trace his family history of Champagne production back to the 1800's. One might say it is in his blood. As of 2005, he took full control of the family vineyards. He farms & makes wine according to the lunar calendar, as well as implementing aromatherapic process in his vineyards. All of his wines go through malolactic fermentation in barrel as he believes that stopping the process would interrupt the wines natural life cycle. There is underripe red fruit on the nose and I high toned chalky energy. This wine is dry as dry can come with 0g/L residual sugar.
