A recent discovery, this is one of the best sparkling wines under $35 on the market. Produced using methode champenoise; one could easily confuse this for Champagne. And we did in a most recent blind tasting.
Alix Chaudoreille was born in Champagne and spent all her childhood in the middle of the vineyards, in the Côte des Bars. She began her professional life with a 10-year career in law. In 2015 she became Mrs. Alix Dangin, by marrying Matthieu Dangin, oenologist in Champagne and owner in Burgundy of the Organic Domain 'Bruno Dangin', a name you may be familiar with. He produces some of the best Crémant in France. With 1 g/L dosage, this wine is Brut Nature in style. The palate is savory and chalky, layering grace and texture with each sip.
Pairing: Do not think too hard about it. Just enjoy.
