Montanet-Thoden 'Galerne', Vézelay, France 2017
Named after the wind that sweeps down from the northwest across the vineyards of Vézelay, the Galerne helps the grapes stay dry, cool, and healthy, and it's a big influence amongst these vines. This family domaine in the Burgundy area of Vézelay, is tended by Valentin Montanet. Raised by two vigneron parents, Valentin felt the call of the family trade, but first wanted to gain a broader perspective. His experiences only strengthened the belief that his parents were doing things just right, by their natural approach to winemaking. This crisp Chardonnay sees only stainless steel, it's dry and focused, think Chablis.
Pairing: Roasted Cauliflower, simply prepared fish.
