Oudiette X Filles 'Uni Terre II' Extra Brut, Blanc de Blancs, Champagne, France 2018 (disg. Spring '22)
Margot Laurent, Charlotte, and their mother Florence established the domaine in 2014. Their family has been cultivating grapes in the Coteaux du Morin for three generations, and they sold their produce to Champagne Pommery. The Petits Coteaux du Morin, located southwest of the Côtes des Blancs and northeast of the Côte de Sézanne, is a lesser-known part of Champagne. Here, there are no Grand or 1er Crus, and the vines are interspersed with forests and fields. The culty and highly sought-after wines of Domaine Ulysse Collin in Congy are the most famous representative of the region.
Uni Terre comes from select plots around the village of Beaunay in the Coteaux du Petit Morin, namely Sablonnières, Bas Vigny, and Gourdaines. The parcels face east and southwest and are planted mainly with Chardonnay on sandy-clay topsoils over a chalky subsoil. Uni Terres is a faithful representation of these unique parcels, vinified in only French oak and aged 10 months in the same. Native yeasts, spontaneous malolactic, no filtration or cold stabilization, and only 1/gl dosage. The resulting bubbly is immediately inviting, bone dry and mineral with creamy mouthfeel, a classic toasty nose and effortless grace.
