A Montreal restaurateur fell in love with the region of Chablis and began his own business in 2008. He makes very expressive and mineral driven styles of Chardonnay from grapes grown by people he trusts. Everything is hand harvested and vinified in separate parcels. From a single parcel of 70+-year-old vines (bordering Dauvissat’s vineyards) located on the left bank of the Serein River. The top soil has a pretty even mix of chalk and clay, giving salty and savory mineral notes.
