A Montreal restaurateur fell in love with the region of Chablis and began his own business in 2008. He makes very expressive and mineral driven styles of Chardonnay from grapes grown by people he trusts. Everything is hand harvested and vinified in separate parcels. His Séchets is a sub-climat of 1er Cru Vaillons. The 2018 vintage was bountiful with terrific weather, producing a wine rich with texture, energy and longevity.
